Restaurant Vermeer
Personally I always try to avoid hotel restaurants for dinner. Neither the staff, interior or food is very pretentious and you can feel having a restaurant is an obligation rather than a result of a passion.
What a surprise I had, when dining in Restaurant Vermeer of the NH Barbizon Palace Hotel in Amsterdam for the first time. The interior is what some might call a bit old-fashioned, but let's go for classic and elegant.
The Chef is as passionate as his staff and makes you feel special through dishes as poached skate with wakame seaweed and fine nicoise ravioli in squid bouillon.
Whenever I'm in the mood for some French Cuisine and a descent glass of wine I go to Restaurant Vermeer and give the Chef Carte Blanche..
